Recipe with Okara Sakura Denbu (Sweet Seasoned Okara Soy Pulp)

Denbu is often used for chirashizushi, maki-sushi, even bento boxes. Denbu is normally pink color and has a sweet taste therefore it is quite popular for children.
Those who have seen Totoro may remember. That pink powder that Satsuki put on her lunch box is Sakura Denbu.
Ingredients
- Eel
- Kinshi egg
- Shredded Nori seaweed
- Pickles
- Greenpeas
- Chirashizushi (sushi taro)
- Okara Sakura denbu
Directions
1. Mix the freshly cooked rice with the "Sushi Taro" (Chirashizushi rice mix).
2 . Cut the eel into pieces and finely chop the pickles (such as Takuan or Shibazuke).
3 . Spread the sushi rice evenly onto a plate. Scatter a generous layer of shredded Nori seaweed and Kinshi-tamago (shredded egg crepes) over the rice.
4 . Arrange the eel, chopped pickles, and green peas evenly on top. Finally, sprinkle a colorful layer of "Okara Sakura Denbu" over the dish to complete it.
